Chickpea Avocado Lettuce
Ingredients
- ½ cup chickpeas cooked
- 1 cup lettuce
- 1 Avocado
- 1 red pepper
- 1 onion
- 2 tablespoon dill chopped
- ½ cup spinach
- ½ cucumber
- 2 small tomatoes
- 7 croutons cubes
- 1 tablespoon olive oil
- 1 tablespoon mustard
- 1 tablespoon black pepper
- ½ tablespoon salt
- 2 tablespoon vinegar
- 1 tablespoon agave syrup
- 1 tablespoon lemon juice
Instructions
- Wash the lettuce, tomatoes, cucumbers, red peppers, dill and spinach. Peel the avocado. Chop everything.
- Mix them in a bowl and add cooked chickpeas. Mix
- Make the dressing with balsamic vinegar, dijon mustard, maple syrup, salt, olive oil, and lemon juice.
- Add the dressing into the salad, and mix well.
- Sprinkle a few sesame seeds, add croutons and serve.
