Vegetables in zucchini also help maintain low cholesterol. The fibers attach to the bile acids, which are secreted by the liver during the digestion process, thus "preventing" the acids from doing their job "properly", pushing the liver to produce even more and thus contribute to the decline. cholesterol levels. In addition, the high levels of vitamin C and A found in zucchini prevent the onset of atherosclerosis.
Anti-cancer action
Another of the many benefits of high fiber in pumpkin is that it prevents cancer carcinogens from settling in the large intestine. In addition, vitamins C and A, along with folic acid, also found in zucchini, act as powerful antioxidants against oxidative stress, which is capable of causing a variety of cancer.
Anti-inflammatory action
The vitamins C and A of zucchini are not only powerful antioxidants in the body's service, but also have an anti-inflammatory role. What is fried squash?
Fried Squash is a popular dish in Greece. My mother usually just cuts it in slices and fry it in plenty of oil. I normally don't prefer this type of cooking it.
Instead, I make a simple batter using just flour and almond milk then dip sliced squash into the batter to coat on both sides before frying them in a thin layer of hot oil.
The finished product is tender inside with a crunchy exterior. I normally serve it with a creamy mutabal, or a garlic sauce or make a sandwich with this delicious Greek Bread.
