The word Hummus is an Arabic word meaning “Chickpeas”. It is an Arab dip or spread that is made from chickpeas that have been cooked, then blended with tahini (a paste from sesame seeds), lemon juice, garlic and salt. (Source Wikipedia). It is Vegan, Gluten-free, High in fiber, protein, and truly delicious!
My first taste of this dish was in Qatar where you can find it in every Arabic restaurant and not only. A Lebanese friend taught me how to make the perfect Hummus.
One of the most popular dishes and super easy to make it. In Qatar, they serve it with those huge pita bread with many different salads, as Moutabal (Baba Ghanoush), falafel, tabbouleh, all vegan, and toothsome!
The recipe does not have any oil, you can just add it at the end if you wish.
Authentic Hummus
The authentic Hummus in Arab Countries has a creamy / garlic taste and you will find it everywhere. They normally serve with whole cooked chickpeas and a splash of lemon. Nowadays, outside Arabic countries, lots of restaurants make an original version of Hummus.
Arabic Platter
Hummus is usually accompanied by other Arabic treats. Moutabalah (or Babaghanoush) - an eggplant creamy dish, Tabbouleh - a parsley/couscous dish, and Falafel - a chickpeas balls dish.
How to make the Ultimate Vegan Arabic Hummus - Step by Step
For the Chickpeas:
Cover the chickpeas with water the night before.
The next day, drain them and wash them well. Cook the chickpeas in fresh water for 1 hour over low heat. (Add salt to the 45 minutes of cooking)
For the Hummus:
Gather all the ingredients (Photo 1)
Leave the chickpeas to cool, drain them and keep the broth aside. Put them in a food processor with garlic, tahini, lemon juice, and salt. Add a little bit of broth and blend until you get a creamy consistency. (Photo 2)
If the mixture is too thick, add a little bit more broth.
Serve, sprinkle a little red pepper and enjoy (Photo 3)

Tips for the Best Hummus Recipe
- You can use canned chickpeas or cook your own for your Hummus preparation. The best taste will be with the cooked ones.
- The type of food processor will determine the texture of the final dish. A good one will give a creamy texture.
- If you prefer a more garlic taste add more garlic.

The original Arabic Hummus
Ingredients
- 2.5 cups chickpeas cooked or canned
- broth of the cooked chickpeas
- 3 teaspoon tahini
- 1 lemon
- 2 large cloves garlic
- 2 teaspoon salt (half to cook the chickpeas and half during blending)
- ½ teaspoon red pepper or chilly flakes
Instructions
For the Chickpeas
