Split Pea Soup Vegan is a mix of green peas, carrots, onion, garlic simmered with flavorful herbs. This vegan pea soup is one of the easiest and quickest soups to make! In Greece is a Vegan Traditional Dish called Arakas.
Place a pot over high heat and let it get very hot. Add the salt, pepper, olive oil to the pot. Add the chopped onion and the chopped garlic. Saute for 3-4 minutes in low heat until lightly golden.
Cut the carrots into cubes and add them to the pot. Saute for 2-3 minutes in low heat.
Cut the potatoes into cubes and add them to the pot. Mix and Saute for 2-3 minutes in low heat.
Add the wine and allow the alcohol to evaporate for 1-2 minutes. Add the canned tomatoes, vegetable cube, and the water to the pot.
As soon as the mixture comes to a boil, cook for 15-20 minutes until the potatoes have softened. Leave the pot uncovered while cooking so that the liquid can evaporate and the sauce can thicken.
Add the peas and half of the dill. Cover pot with lid and simmer over low heat until peas are cooked.
When ready, remove from heat. Add the remaining dill, lemon juice, salt, and pepper.
Serve hot and drizlle with olive oil and dill.
Notes
Use 4 – 7 cups of water, depending on how thick you like your Vegan split pea soup.
Make sure to cook the veggies first, as they will cook slower than the peas.
