Chickpea Avocado Lettuce

This Chickpea Avocado Salad is green and is considered extremely beneficial to health. It has a rich taste, but also excellent properties. Combine it with Chickpeas and homemade croutons and you will have a nutritious great salad!

Ingredients

  • 1 cup lettuce
  • 1 Avocado
  • 1 red pepper
  • 1 onion
  • 2 Tbsp dill chopped
  • 1/2 cup spinach
  • 1/2 cucumber
  • 2 small tomatoes
  • 7 croutons cubes
  • 1 Tbsp olive oil
  • 1 Tbsp mustard
  • 1 tbsp black pepper
  • 1/2 tbsp salt
  • 2 Tbsp vinegar
  • 1 tbsp agave syrup
  • 1 tbsp lemon juice

Instructions

  • Wash the lettuce, tomatoes, cucumbers, red peppers, dill and spinach. Peel the avocado. Chop everything.
  • Mix them in a bowl and add cooked chickpeas. Mix
  • Make the dressing with balsamic vinegar, dijon mustard, maple syrup, salt, olive oil, and lemon juice.
  • Add the dressing into the salad, and mix well.
  • Sprinkle a few sesame seeds, add croutons and serve.

Notes

  • Dressing – You can mix and match lots of ingredients to make a dressing. Whisk in mustard or Agave syrup or add various spices.
  • Greens – Use various types of greens to elevate your Vegan Salad.
  • Fats – Adding fats to your salad is essential for a tasty salad. Use seeds, oils, or avocado.
  • Avocado: If you are going to prepare the salad in advance so that the avocado does not turn black, pour half of the lime juice over it and keep it separate in a plastic bag. Add it to the plate or individual dishes just before serving.
  • Chickpeas: You can use canned chickpeas (just drain them) or cook your own. Let them cool before use.
