Healthy Salad Recipe | Lettuce & Avocado Salad with Mustard Vinaigrette

An Asian Healthy Salad Recipe made with lettuce and avocado, carrot, raisins, nutritional yeast, and a mustard vinaigrette. This nice salad is great for eating outdoors, as a packed lunch or a healthy dinner dish and couldn’t be simpler to make!

Ingredients

  • 1 lettuce
  • 1 avocado
  • 1 small carrot
  • 2 Tbsp raisins
  • 1 tbsp sesame seeds
  • 1 Tbsp nutritional yeast

Vinaigrette

  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 Tbsp maple syrup
  • 1 Tbsp mustard
  • 1/4 cup balsamic vinegar
  • 1/4 cup olive oil
  • 2 Tbsp lemon juice

Instructions

  • Clean the lettuce and dry it very well. Cut it into medium pieces.
  • Cut the avocado into small pieces.
  • Put the salt, black pepper, mustard, vinegar, olive and lemon juice in a shaker and shake very well.
  • Place the lettuce in a bowl, grind the carrot on the top, add the avocado, the sesame seeds, the raisins and mix.
  • Before you serve, drizzle with the vinaigrette and with the nutritional yeast.
  • Mix well and serve.

Notes

  • Use fresh ingredients, locally grown ingredients
  • Use a good quality mustard
  • Use a good quality olive oil
  • You can add nuts, baked tofu or black beans and make it a full meal.
  • Use any other green instead of lettuce
