Quinoa Salad marinated in a delicious, rich and lemon dressing. In this Vegan Tofu Recipes series, I use white Quinoa and made a simple and super quick sauce that you’re sure to love. Super healthy and nutritious!
Rinse the quinoa under cold running water to remove its bitter flavour. Put into a pan and add double the amount of salted water. Place over medium heat and bring to the boil. Reduce to a simmer for 10 to 15 minutes, or until tender and the liquid is absorbed. Fluff it up with a fork
Wash the greens and the beans and cut them into medium size pieces.
Cut the cherry tomatoes in half.
Mix well the olive oil, lemon, pepper, salt, and garlic and let it rest for 15 minutes so all the flavors combine together.
Place the greens, tomatoes and the beans on a serving plate and mix well. Add the raisins, capers and the walnuts and mix again.
Before serving, drizzle with the lemon dressing and mix.
Notes
