Salad with Lemon Dressing | Vegan Quinoa Recipes

Quinoa Salad marinated in a delicious, rich and lemon dressing. In this Vegan Tofu Recipes series, I use white Quinoa and made a simple and super quick sauce that you’re sure to love. Super healthy and nutritious!

  • 1/3 cup White Quinoa
  • 1 cup greens of your choice
  • 1/3 cup walnuts
  • 1/3 cup red pepper
  • 1/3 cup cherry tomatoes
  • 2 Tbsp raisins
  • 2 Tbsp capers
  • 1 tbsp salt
  • 1/3 cup lemon
  • 1/3 cup olive oil
  • 1 tbsp minced garlic


  • Rinse the quinoa under cold running water to remove its bitter flavour.  Put into a pan and add double the amount of salted water. Place over medium heat and bring to the boil. Reduce to a simmer for 10 to 15 minutes, or until tender and the liquid is absorbed. Fluff it up with a fork
  • Wash the greens and the beans and cut them into medium size pieces.
  • Cut the cherry tomatoes in half.
  • Mix well the olive oil, lemon, pepper, salt, and garlic and let it rest for 15 minutes so all the flavors combine together.
  • Place the greens, tomatoes and the beans on a serving plate and mix well. Add the raisins, capers and the walnuts and mix again.
  • Before serving, drizzle with the lemon dressing and mix.


  • Quinoa should be washed very well to remove its bitterness.
  • Rinse the quinoa under cold running water to remove its bitter flavour.
  • Once cooked, Fluff it up with a fork
