1 cup lentils brown 2 tablespoon olive oil 1 onion medium 3 carrots chopped in cubes 2 cloves garlic 2 bay leaves 1 tablespoon dried oregano 3 cups tomato juice 1 cup water 1 tablespoon salt 1 vegetable cube ½ tablespoon cumin
Gather all the Ingredients
Place a large pot overheat with lots of water. Add the lentils and let them boil for 2 minutes.
Strain and clean thoroughly.
Place a large pot with olive oil in low heat. Chop the onion and the garlic and add them to the pot.
Let them simmer until golden.
Chop the carrots into small slices. Add them to the pot and sauté for 3-5 minutes, until they soften.
Add the bay leaves and cumin.
Stir and add the lentils, chopped tomatoes, and vegetable stock.
Cover the pot and simmer for 45 minutes over medium to low heat.
When ready, add the salt.
Use 1-2 cups of water, depending on how thick you like your Vegan Greek Lentil soup,
