The Perfect Greek Lentil Soup
It is one of the most characteristic Greek dishes and depending on the region, it is prepared with small variations.
Which Lentils are the best for a delicious Greek Lentil Soup
Cooking time, depending on how slow the lentils are, varies from 40 minutes to 1 hour. That's why I avoid mixing lentils from different bags in one cooking because some can boil quickly and others later.
Thin or thick, all suitable. I often use thin ones, because they dominate the market, but, if you want, you cook the thick ones.
Water matters!
Water and lens ratio. I estimate 1 cup lentils for 4 servings. For this dosage I use 1 glass of water plus the tomato juice, depending on how wet it is and how thick or thin we want our soup. First let the lentils get a boil with the water, then lower the heat and simmer.

Broth and Tomatoes
They are 2 ways you can make the Greek Lentils. Either use tomato sauce or just plain water with veggie broth.
You can add fresh grated or canned tomatoes that we will chop or a little good quality pulp. Canned tomatoes and pulp are halfway through cooking, but if you put them fresh, you'll add it 10 minutes before the end.
Boil the lentils over low heat, because the intense boiling shakes them on the walls and lid of the utensil and shreds them. We cover the utensil halfway because the lenses "inflate" and the contents spill out.
Salt and Pepper time
You salt at the end when you add the olive oil to get its fresh taste.
The classic "smell" that we put, the bay leaf and the garlic, usually come in after the first boil, that is, when we lower the heat and the slow cooking begins. Usually, for a quantity of 4 servings, 3-4 cleaned and coarsely chopped garlic cloves and 1-2 bay leaves, fresh or dried, are enough.
Serving Suggestions
Vinegar and oil, when served, are very common flavors of the soup. You can use white balsamic vinegar, red wine vinegar, spicy vinegar and whatever else you want.
This Greek Lentil soup is super comfort on its own, but the serving suggestions give this extra taste kick. Here are a few of my favorite ones:
- Bread: Serve with a homemade Greek Pita Bread and olives on the side.
- Salad: Serve with a Beetroot salad or with a salad with lemon dressing.
- Serve the lentils in a serving bowl and add 1 tablespoon of olive oil and 1 tablespoon of vinegar.

This recipe makes 4 portions. You can put it on the fridge for 3-4 days and reheat it. I usually make a big portion, place it in bowls, and put it on the freezer. Leave out of the Freezer for 1 hour and reheat.

Place a large pot overheat with lots of water. Add the lentils and let them boil for 2 minutes (Photo 1). Strain and clean them thoroughly.
Place a large pot with olive oil in low heat. Chop the onion and the garlic and add them to the pot. (Photo 2). Let them simmer until golden.
Chop the carrots into small slices. Add them to the pot and sauté for 3-5 minutes, until they soften (Photo 3)

Greek Lentil Soup
Ingredients
- 1 cup lentils brown
- 2 tablespoon olive oil
- 1 onion medium
- 3 carrots chopped in cubes
- 2 cloves garlic
- 2 bay leaves
- 1 tablespoon dried oregano
- 3 cups tomato juice
- 1 cup water
- 1 tablespoon salt
- 1 vegetable cube
- ½ tablespoon cumin
Instructions
- Gather all the Ingredients
