Why I like this recipe
Without a doubt, I love pasta and I love many salads with it.
But I rarely combine them, mainly because pasta is a rich food that I usually eat hot with soya or tofu with sauce, cheese, and sour cream or pesto.
On the other hand, I was used to salad when we made a diet or to accompany protein. I, for example, do not eat a salad with spaghetti or oil, but I eat many wonderful salads as a main meal or as a light dinner, especially in summer.
But since I like pasta, I love salads, I want to eat and eat cool food, especially in summer, why not combine the two? So I will make, here, together, a shocking delicious salad with pasta, of many kinds with different colors, smells, combinations, and tastes.
Ingredients
Pasta: You can use any pasta you like.
Cherry tomatoes: Cherry tomatoes are the best for this recipe. Make sure they have a crunchy texture.
Olives: I used black olives but you can use any type you wish.
Olive Oil: Can be replaced with other oils like sunflower, coconut, and sesame but olive oil works the best!
Onions: Use fresh onions or green ones.
Red Peppers: Give the sweetness you want for this recipe.
Cucumber: Do not omit the cucumber from this recipe.
Capers: Capers give a salty and acidic flavor, essential for this salad.
Lemon juice and lemon zest: Freshly squeezed lemon and lemon zest give a light texture to this recipe.
Seasoning: Oregano, salt, pepper.

HOW TO MAKE Vegan Pasta Salad – STEP BY STEP
Step 1: Gather the ingredients. Wash all the vegetables and cut them into small pieces.
Step 2: Add all the chopped ingredients to a plate. For the olives, you can use them as they are or just remove the flesh.
Step 3: Make the dressing with salt, olive oil, lemon zest, and lemon juice.
Step 4: Add the dressing to the salad, and mix well.
Step 5: Sprinkle a few sesame seeds, and lemon zest, and serve.

- The quantities are for 2-4 people but the recipe can be made with 1 package of pasta (½ kg) with the appropriate adaptation to the other ingredients by trying step by step you are sure of success and great taste.
