Fried Squash

Ingredients

  • 5 green squashes
  • 1 cup cornmeal
  • gluten free flour
  • 1 cup almond milk
  • 1 tablespoon salt
  • 1 tablespoon black pepper
  • coconut oil for frying

Instructions

  • Mix the flours in a big bowl. Add the almond milk and mix until is well combined.
  • Heat a pan in medium heat and add the coconut oil.
  • Dip each squash slice in the buttermilk mixture and coat them on both sides.
  • Fry them in hot oil, turning to brown both sides.
  • Remove from oil to a paper towel-lined rack to drain.
  • Serve them with your favourite sauce.

Notes

  • Zucchini, yellow squash, and crookneck squash all have completely edible skin and seeds. Pattypan squash generally has edible skin.
  • Freezing is a great way to preserve excess squash. Frozen squash can be taken out of the freezer later when you are ready to cook them.
  • Drain the fried food on paper towels or on a rack immediately after removing from the hot oil.
  • Cut the zucchini in thin slices so they can even be cooked.
  • To keep food hot while cooking, place a baking sheet with paper towels, and preheat the oven to 180 F.
