My own cooking is influenced by where I have lived, by the people I have interacted, by the courses I have studied and by the flavours of my childhood. It is teeming with aromatic flavours that depend on fresh herbs, juicy fruits, earthy vegetables, as well as lots of Greek organic products from my family and selective producers.
Today's recipe is influenced by my previous flatmate in Qatar. He used to cook a similar dish but with the use of shrimps. It's very simple, very quick and mouthwatering indeed. You will need just ten minutes to cook it and that's it.
How to make this Sauteed mushrooms wine (Step by Step)
- Gather all the ingredients (mushrooms, spices, lemon, mandarin, butter and oil)
- Heat a pan and add the oil, butter and the spices.
- Cook for 2-3 minutes in low heat and add the mushrooms.
- The sautéing of the mushrooms shall be carried out in low heat. As you can see the mushrooms start to caramelise and have a nice juicy colour. Add the juice of the lemon, the wine and the mandarin.
- Serve Immediately.
Cook's Tips:
- You can use any mix of spices you want. Basil, rosemary, thyme etc,
- You can serve it as it is or with curry mashed potatoes spiced with paprika,
- I like to keep the mushrooms in pieces, but if you like, you can keep them whole,
- You can omit the butter and increase to one tablespoon olive oil.

Sauteed mushrooms wine recipe
Ingredients
- 4 cups mushrooms
- 1 teaspoon olive oil
- ¼ cup vegan butter
- ½ lemon
- ½ mandarin
- 1 teaspoon chilly pepper
- salt to taste
- ¼ glass white wine
Instructions
- Slice the mushrooms, heat a pan and add the oil, butter, salt and pepper over low heat.
- Add the mushrooms and squeeze the lemon and mandarin. Add the wine. Sauté until soft and all the mushrooms release their juices.
- Top with chilly pepper and serve immediately. Bon appetite.
Notes
