I love this recipe as it reminds me of my childhood. It was one of the favourite dishes in our family. Yup, Gigante Beans Recipe is so good!
What Kind of Beans to Use?
Choose the big white beans because they hold their shape and are really creamy inside. That sturdiness makes big beans ideal for this traditional Greek recipe.
Proper Gigante beans can be tricky to find, but Amazon is a great resource for dried gigantes. Of course there a few Greek exporters also which provide various legumes or take a big batch after your next visit to Greece.
How to make Giant Bean Recipe Step by Step
Making Gigante Beans is super easy!
Step 1: Pour enough water over to cover beans by 7 cm; let soak overnight. When they are inflated and ready, drain and rinse them with water. Preheat the oven to 356 Fahrenheit in air.
Step 2: Put the beans in the saucepan, add water and transfer to the fire. When the water gets boiled, remove the foam with a spoon and let simmer for 1 hour to soften.
Step 3: When ready, strain and leave them aside.
Step 4: Gather and cut all your vegetables in cubes.
Step 5: In a pan, add the olive oil, leeks, garlic, onion and mix for 2-3 minutes until golden in low heat.
Step 6: Add the red peppers, the celery, black pepper, cinnamon, lemon zest and the rosemary. Mix for 5 minutes in low heat.
Step 7: Add the tomato juice and the vegetable stock cube and let it cook for 2 minutes.
Step 8: Add the cooked beans, cilantro, dill, bay leaf and mix
Step 9: Transfer the beans in a medium size pan. Cover with aluminum foil and bake for 1 hour and 15 minutes.
Step 10: Every fifteen minutes we taste the beans. When softened, mix and bake for another quarter.
Step 11: Serve with parsley finely chopped.
TIPS to make the perfect Giant Beans
• When buying giants, make sure that the product is not yellowed and cracked. In addition but the Big Beans. If you buy bulk giants check how hard they are. Choose the hard ones,
• Soak the giants from the previous night in a large bowl, covered with plenty of tap water. Add 1 teaspoon of soda powder,
• If we need to add water during boiling or cooking, add boiling water so that their boiling is not interrupted.
