Potatoes are just a staple food that everybody loves! It's healthy and super quick to make. You can have its as a snack or main dish.
Why this recipe works?
- To get that crispy flavor just season the potatoes with salt, pepper, and oil.
- Use fresh vegetables, your favorite veggies, and you are done!
Vegan mayonnaise
Vegan Mayonnaise is one of my favorites for this dish but you can use a garlic sauce or a delicious Arabic Mutabal.

Can I cook the potatoes in the microwave?
Yes, you can! Wash them properly and place them in the microwave for 10 minutes, turning it over halfway.
Can I cook broccoli?
I personally used it raw but you can cook or steam it as well.
Can I replace the kidney beans?
Yes, you can use cooked chickpeas, tofu, or any other Vegan protein.
Step by Step Instructions
Wash the potatoes and Poke several holes in each potato with a fork (Photo 1)
Put them on a pan and sprinkle olive oil, salt, and pepper (Photo 2)
Heat the oven to 356 °F on the middle rack
Place the potatoes to oven and cook until a fork slides easily through flesh. Approximately 30-45 minutes (Photo 3)
Remove the Vegan Baked potato from the oven and let them cool for 5 minutes. Cut a little bit on the top of the potatoes and remove the flesh.
For the Vegan baked potato toppings, use broccoli florets, kidney beans, capers, small pieces of red peppers, and vegan mayonnaise.
Serve and enjoy!

- 4 potatoes medium size
- 1 cup broccoli florets steamed
- ⅓ cup red beans mushed
- 3 tablespoon red peppers cut in cubes
- 3 tbsp capers
- ½ tablespoon pepper black
- ¼ tablespoon salt
- 2 tablespoon mayonnaise vegan
- 2 tablespoon olive oil
